2 pounds grass-fed ground beef
3 tablespoons tomato paste
2 teaspoons sea salt
¼ teaspoon black pepper
1 pastured egg, whisked
2 tablespoons Dijon mustard
½ large white onion, finely diced
2 cups shredded raw cheddar cheese, divided
For the Special Sauce:
2 tablespoons tomato paste
½ cup avocado oil mayonnaise
3 tablespoons Dijon mustard
2 tablespoons fermented pickles, finely chopped
2 plus 2 tablespoons pickle juice
1 teaspoon raw local honey
1 teaspoon garlic powder
½ teaspoon sea salt
For Topping:
¼ cup red onion, finely chopped
2 large Roma tomatoes, diced
¼ cup fermented pickles, thinly sliced
1 cup shredded romaine lettuce
How to Make Cheeseburger Casserole
Preheat the oven to 375°F.
In a large bowl, combine ground beef, tomato paste, sea salt, pepper, egg, Dijon mustard, diced onion, and 1 cup shredded cheddar cheese. Mix until fully combined.
Press the mixture evenly into a 9x13 casserole dish.
Top with the remaining cheddar cheese and diced onion, pressing gently into the surface.
Bake for 30 minutes. Carefully drain excess liquid if needed, then return to the oven for an additional 15 minutes or until cooked through and browned on top.
While the casserole bakes, whisk together all special sauce ingredients in a small bowl and season to taste.
Allow casserole to cool slightly before slicing into squares. Top with shredded lettuce, tomatoes, pickles, red onion, and drizzle with special sauce.
